Spain and Portugal's Michelin Guide 2023 will be held in Toledo on November 22.
It will take place at the El Greco Congress Palace (for the third year in a row) and online this year, where the restaurants with one, two, and three Michelin stars will be announced.
According to the Michelin Guide Spain and Portugal, Castile-La Mancha was picked for its gastronomic individuality, influenced by its multicultural culinary past and active involvement in the development and dynamisation of the region's cuisine.
The city of Toledo, which has been a UNESCO World Heritage Site since 1986, "has an unequalled history and is regarded as a true melting pot of civilizations, with a big population of Christians, Jews, and Muslims living in peace for generations," according to the firm.
Traditional Dishes
Castile-La Mancha's food will be showcased, including traditional game dishes, La Mancha cheeses, saffron, honey from La Alcarria, garlic (the largest garlic-producing region in the European Union), and marzipan.
Chefs Fran Martnez (Maralba restaurant, Almansa) and Ivan Cerdeo (Iván Cerdeo restaurant, Toledo), both with two Michelin stars, will be the event's gastronomic coordinators, while seven one-star restaurant chefs from the region will also be offering their proposals during the dinner that follows the gala.
Green Stars
We will continue the theme of sustainability in the next edition of the guide by awarding green stars to restaurants that demonstrate a commitment to sustainable cuisine and the future of the planet.
Therefore, Toledo beats Valencia as the stage for the announcement of the Iberian stars whose galas have already taken place in Madrid, Barcelona, Marbella, Girona, or Santiago de Compostela, as well as in Lisbon (2018) in Portugal.
Portugal has seven restaurants with two Michelin stars ('excellent food, worth the detour') and 26 restaurants with one Michelin star ('great cuisine, worth the stop') in this year's edition. No restaurants in the country receive the highest rating of three stars ('excellent cuisine, deserves the journey').
