FOR those who haven’t come across them, a coca is a Valencian dish, an open flat-bread with a variety of toppings. Some might say that it is similar to a small pizza (but never say that to an authentic coca chef). This years National Coca Contest was held in Oliva last Sunday, a town where the snack is especially popular. The winner was chef Francesca Server from local restaurant Oasis who made a wheat flour and corn creation topped with onions and peas. After receiving the €1,000 first prize she paid tribute to her late mother whose recipe she had used after it was passed on many years ago. Michelin starred chefs, world renowned bakers and professional food critics were among the international jury.
